Kid Friendly - Wholesome Quesadillas

Ingredients

Tortillas

  • (flour or corn – we love the “uncooked” versions of these)

Choice between Mexican and Italian versions

  1. Mexican:

Refried beans(pinto or black beans)

                Corn

                Ground beef

Chili peppers

                 Spinach

         2. Italian:

                 Italian sausage or Pepperoni

                  White beans

                  Bell peppers(diced – any color)

                  Spinach

Additional ingredients

Shredded Cheese(we use dairy/soy-free alternative cheese)

Guacamole or Spaghetti Sauce

Directions 

1.    Pre-heat pancake griddle or George Forman type grill

2.    Place one tortilla on a cutting board

3.    Spread preferred toppings on tortilla

a.    Keep toppings fairly thin so they don’t mush out the sides

4.    Place additional tortilla on top of toppings

5.    Lift uncooked Quesadilla onto heated griddle

a.    If using a closable griddle, close the top

b.    If using a pancake griddle, grill until toasty and then flip (good luck!)

6.    Remove from heat once cheese is melted and tortilla toasty

7.    Let cool before slicing

 

Serve with guacamole or spaghetti sauce for dipping!

 

This can be modified to make Nachos by placing all preferred ingredients on top of corn chips and placing in either a 400-degree oven on foil covered pan or the microwave to heat.I add the spinach at after heating so it doesn’t wilt.
