Pumpkin Pie
It’s Pumpkin Pie season and this recipe is one of my favorites.
See Pie Crust for homemade pie crust recipe. You need one batch of crust to make two pumpkin pies.
Note
· This recipe makes 2 pumpkin pies
Ingredients
2 cups Pumpkin(canned or fresh drained and blended)
1 teaspoon Cinnamon
1/2 teaspoon Ginger
1/2 teaspoon Nutmeg
1/4 teaspoon Ground Cloves
2 cup Milk(dairy or alternative milks work fine!)
1 cup Sugar
2 Eggs(in lieu of eggs, corn starch or gelatin have worked for me)
1 teaspoon Salt
Directions
· Preheat oven to 400 degrees
· Blend spices with sugar.
· Blend pumpkin with sugar mixture.
· Stir in remaining ingredients.
· Pour equal amounts of mixture into 2 Unbaked Pie Crusts
· Place in oven on bottom rack.
· Place cookie sheet or foil on bottom of stove to catch any drips.
· Bake for 30 minutes then lower to 325 degrees and cook another 20 minutes or until inserted knife comes out clean.
