Black Bean Brownies
These are D E L I C I O U S
Ingredients
1 15 ounce can Black Beans (rinsed and drained)
2 Eggs or 2 Flax Eggs (2 heaping tablespoons Flaxseed Meal + 6 tablespoons water)
3 Tablespoons Coconut Oil melted (or oil of your choice)
3/4 cup Cocoa Powder
1/4 teaspoon Salt
1 teaspoon Vanilla Extract
1/2 cup Sugar
1 1/2 teaspoon Baking Powder
Directions
1. Preheat oven to 350 degrees
2. Add all ingredients into food processor to puree (about 3 minutes) scraping sides if necessary.
3. If batter appears thick, add 1-2 tablespoons of water and pulse again. Batter should appear like less thick than chocolate frosting, but not runny.
4. Spread in 8”x8” (or round) well greased glass pan.
4. Optional: top each with mini-chocolate chips or crushed nuts.
5. Bake for 20-26 minutes or until tops are dry and edges pull away from sides.
Serve warm with Ice Cream, Frozen Yogurt or Fruit.
