Oven Roasted Chicken Drums

So, my Costco is carrying prepackaged ORGANIC chicken legs!  My son cannot get enough of meat on a bone (seriously, the kid will chew the same bite of chicken for no less than 30 minutes, but if you give it him on the bone he sucks it clean in 5 minutes!), so I am motivated to find more ways to serve this choice!  

Directions

  • Preheat oven to 425. 

  • Wash drumsticks under running water and pat dry with paper towels. Trim of any extra skin and any loose joint pieces.  I actually removed all of the skin because I like the spice directly on the chicken.

  • Spice as you please.  This time I did not have much time to prep, so just a sprinkle of each salt, pepper and dry ground garlic was good.  But, you could sprinkle with fresh, frozen or dried rosemary, basil, cilantro, sage, thyme…cayenne!  

  • Placed on large pan.  I lined mine with foil and put in a rack to allow all sides to cook evenly.  I also sprayed the rack and foil with spray oil.  If you don’t use a rack, I would rotate the legs ½ way through cooking.

  • Cook to 185 plus internal temp. DO NOT STOP SHORT of 185. About 35 minutes in my oven. Let set for 10 minutes before serving. They are way too hot to eat right away and will be better after a rest.

You definitely brush on or dip in bbq (see recipe for same in earlier blog), orange sauce or any sauce you love after baked through.

 

I served with couscous cooked with a little oil and salt and a huge serving of broccoli and cauliflower. YUM!
